Tigernuts are not actually nuts – they are botanically tubers and come from the plant Cyperus esculentus. It can sometimes be known as sometimes known as chufa sedge, nut grass, yellow nutsedge, tiger nut sedge, or earth almond. Tigernut Flour can contain up to twice as much starch as potato or sweet potato. It can be added to biscuits and other bakery products as well as in making oil, soap, and starch extracts. It is also used for the production of nougat, jam, beer and as a flavouring agent in ice cream.
